Cheese and Zucchini Quinoa
with Sun Dried Tomatoes
Serves 4


1/2 package of Quinoa
1/3 tsp. coarsely crushed Green Cardamon (Elaichi) seeds
1/4 tsp. Paprika
1 1/2 – 2 tsp. Minced Garlic
6 Sun Dried Tomatoes halves, sliced (use the kind that come packed in oil)
2 Oz. Pomegranate Juice (not cocktail)
2 Tbsp. Butter
1 large Zucchini, cut into very small pieces
Salt to taste
1/4 lb. Havarti Cheese, sliced
a few chopped Hazel Nuts

Cilantro

Cook Quinoa according to the directions on the package
Add the Cardamon, Paprika and Garlic to the cooked Quinoa
Add the Sun Dried Tomatoes and the Pomegranate Juice
Continue to cook over med-high heat until almost dry
Melt the Butter in a large frying pan over high heat
Add the Quinoa when the Butter is very hot but not smoking
Cook, stirring constantly, over high heat until it just begins to clump
Immediately remove from heat
Boil or Steam the Zucchini until tender-crisp
Drain and stir into to the Quinoa
Transfer the Quinoa to a plate, top with the sliced Havarti
Microwave to melt the cheese
Top with chopped Hazel Nuts
Garnish with Cilantro

Loving the Globe knife! Anthony Bourdain is all about those. Careful with the garlic – once you open that jar, the flavor goes away pretty quickly… it’s kinda the same with whole herbs – the more whole something is, the more flavor. Funny that you chose to grind your own cardamom but not mince your own garlic. Great video :-)

Thanks, Jenny! That’s good to know about the garlic. Good observation about the garlic and cardamon. I think that’s part of the ADHD thing – being impulsive and not thinking things through. You never know what Teddy’s going to do when he’s cooking. That’s part of the fun. I hope to get the second video done by tonight or tomorrow. Teddy makes an interesting succotash and runs into some problems with a jalapeño. Be sure to check it out and let us know what you think. Thanks again for the nice comment.
