This is our second taping session. We were both kind of tired, but, as I reminded Teddy, “Most of the work of the world is done by people who aren’t feeling their best.” So, we went ahead and taped anyway. You’ll notice that being tired makes Teddy’s ADHD worse. I don’t have ADHD and being tired ain’t that great for my speaking or thinking abilities, either. Remember, life is not a bowl of cherries for anybody. It’s cherries and lemons for all of us. Time for Cherry Lemonade! Yeah, baby!

Turkey Zucchini Spaghetti
Serves 3
Trader Joe’s Organic Tomato Basil Marinara 1 16 Oz. Jar
1 Medium Red Onion, coarsely chopped
4 medium zucchini, cliced into 1/4 inch rounds
Spaghetti Noodles
Apple Juice 2 Oz.
8 Medium Sized Button Mushrooms, sliced
Wolfgang Puck’s Chicken Stock 2 Oz.
Ground Turkey 1 lb.
Gelson’s Rustic French Bread
Olive Oil
Salt 1 tsp.
Paprika 1/4 tsp.
Turmeric 1/2 tsp.
Nomu Morrocan Spice 3/4 tsp.
Methi (Fenugreek) 1 tsp.
Thyme 1/2 tsp.
Minced Garlic 1/4 tsp.

Boil a big pot of water and add the spaghetti needles and 1 tsp. olive oil
Heat 2 Tbsp. Olive Oil along with 1 tsp. Salt, Paprika, Turmeric, Morrocan Spice
Add the chopped onions and sautee lightly over a med-high flame
Add the zucchini and 1/2 the marinara sauce, cover and continue to heat
After a couple minutes, add the Apple Juice
After a couple more minutes, add the mushrooms
Add the chicken stock and methi
Add the thyme, minced garlic and lower the heat to a simmer
Add the remainder of the marinara sauce and continue to heat
Brown the ground turkey in 1 tsp. olive oil over medium heat
Add it to the marinara sauce and heat thoroughly
Assembly:
Serve the sauce over the spaghetti noodles. Garnish with slices of toasted, buttered French bread.
IDEA: For a vegetarian dish, simply leave out the turkey!
